Why do many religious people (of different faiths) think that science is supposed to be deductive...?

Because science admits that it isn't 100% sure of everything. Like a wise man once said about security in Linux "Do you want the feeling of security you get with Windows or the best damn security possible?" Religious people want the sense of security, or in this case certainty.
